benecel™ methylcellulose

chemistry: cellulosics

Benecel™ methylcellulose is plant-based, sustainably sourced, and widely used as a food ingredient for its unique and unmatched functionality. Its long history of safe use and its versatility make it a trusted component in the formulation of many food products.  Benecel™ methylcellulose is non-GMO, vegan, gluten-free, and allergen-free. It provides texture and binding to a variety of food applications including alternative protein, processed meat, and fried and convenience foods.

Methylcellulose is commonly used in alternative meat and seafood applications as well as processed meat to improve texture and binding. During cooking, methylcellulose creates a thermal reversible gel that provides a firm meat-like texture which remains as the product cools to eating temperature. Thermal gelation is a unique property of methylcellulose and is a functionality unmatched by any other hydrocolloid.

Methylcellulose can also be used in fried and convenience foods to aid in shape retention, bind ingredients, and reduce oil pickup to help provide stability and prevent boil out for filled and fried foods.

Ashland has a portfolio of methylcellulose grades that provide a range of texture to food applications.
